Make a creamy miso udon carbonara at home– and on a budget!
Food content creator Anh Phan is in the '$10 Fine Dining' Kitchen showing us how to make a delicious and unconventional take on creamy carbonara pasta.

ANH PHAN: Hi, guys. My name is Anh. I'm a food content creator and chef. You can find me at @whatsgoinganh. This is $10 fine dining where we make gourmet meals that are affordable and accessible. Today, I'm going to be showing you guys how to make a miso udon carbonara. I'm using two chunks of thick bacon. Let me heat up your pan and drop in the bacon. So I'm just going to fry this until it's nice and crispy.
I'm going to make the sauce. You're going to need two egg yolks, a little bit of white miso paste, one big clove of garlic, and lots of cheese, and a little bit of heavy cream so that it would break down the egg and separate it from the egg and cheese. A lot of black pepper. I'm going to mix it until it's very bright yellow color. I'm going to drop my udon into the hot water.
So when your udon is half cooked, drag it into the pan. I'm going to add the sauce in. Stir until the noodle sticks to the sauce. Plate it nicely. Top it off with some shredded nori for some color. I'm using togarashi, which is a Japanese spice. And I'm just going to top it off with more cheese because we like cheese. Tada! It's really creamy and this bacon adds saltiness to it. This literally took me less than 10 minutes, and it was less than $10. So you guys got to try it.
