Beef-A-Roo holding grand opening for first Springfield restaurant on Friday
Illinois-based fast casual restaurant chain Beef-A-Roo is opening its first Springfield location this week at 1411 W. Kearney St.
The grand opening will be held Friday, and the first 100 customers get a golden ticket that is good for one free order of junior cheddar fries every week for a year.
"We're really excited to be down in this area," said Matt Riddle, Beef-A-Roo's chief operating officer.
In addition to the Kearney Street location (in a former Dairy Queen building), Riddle said Beef-A-Roo is also planning to open a second Springfield location in the old Hardee's building on East Chestnut Expressway.
Riddle said Beef-A-Roo hopes the Kearney Street restaurant will be the first step in an expansion that will eventually include locations in Branson, northwest Arkansas and the Kansas City area.

Riddle said Beef-A-Roo has a well-rounded menu that includes 100% fresh ground beef burgers, roast beef sandwiches, soups, chili, wraps and their famous cheddar fries.
Beef-A-Roo was founded in 1976 in Rockford, Illinois and now has several locations in the state. Beef-A-Roo on Kearney Street will be open daily from 10 a.m. to 9 p.m.
